My oldest son’s teacher has celiac disease so I had only baked one gluten free treat for him the whole year! I wanted to try a gluten free cupcake for him. I had found a chocolate cupcake recipe that was gluten free and very similar to my regular chocolate cake recipe. Using Bob’s Red Mill gluten free flour mix, I baked up a batch, frosted one and tried it. Bleck! It did not taste good to me. I did, however, wonder if I just wasn’t used to the taste of gluten free flours. So I decided to let the celiac be the decision maker. I frosted one more, took it to the teacher and he devoured it! I was happy that I could now have a gluten free cupcake as an option for my customers.
He got a whole dozen the next morning decorated in apples of course.
