Blackberry Jam Scones

Saturdays are scone days for my family. This particular Saturday, I made my basic scone recipe and remembered I had some lovely blackberry jam fromTrader Joes to use up. I rolled my scones thin, spread the jam on and folded the dough over. They baked up lovely. My husband said they reminded him of the best pop tart he ever had. Ill take that!

Sugar-free scones (almost….)

One of my family’s favorite Saturday treat is scones. I usually make them for breakfast. But we are really moving away from sugar! I know how crazy and ironic that sounds, but I know it’s better for us! I have been dabbling in baking with stevia and this was a success.

I used my normal vanilla bean scone recipe and just subbed in some stevia baking blend. Of course, there still was some sugar because of course we had to have a powdered sugar glaze on top. Thats why they were {almost} sugar free.

Rhubarb Strawberry Scones

I invited a neighbor over for coffee and had to bake something sweet to go with it! I had some lovely strawberries in the fridge begging to be made into something. I used my basic scone recipe, added some sliced strawberries and some homemade strawberry-rhubarb jam to the middle of each scone

They turned out delicious and I earned a customer that day!
